All our olives are always from the last harvest from our Greek farmers. Green olives come from northern Greece, in the Halkidiki area. All the olives that we offer in jars are hand-picked and stored in homemade lake with mediterranean herbs and extra virgin olive oil to finish. Our olives are long-term debittered  and are not pasteurized or chemically treated.
